Day 94-Peter Cottontail, great “under 100” calorie snack, and Alfredo sauce

It’s Tuesday and already it has been a busy and somewhat emotional day. I’m sitting at my desk munching on strawberries and trying to unwind a little before I dig my feet into this 4pm newscast.

This morning my photog and I shot a 2 part “No Excuses” report. Part 1 will run Monday. I knew the topic going into the shoot but I didn’t anticipate my own reaction. I’ll post more on the piece a little later this week.

Last night I went for a long walk through my neighborhood and then came back to do lunges, squats, and sit-ups. I had some unexpected company as Peter Cottontail was making a visit in my backyard. Surprisingly he didn’t run. Instead he hung out by the fence through my workout. I appreciated his company as he was non-judgemental when my plank almost turned disastrous. And he didn’t laugh when I screamed like a girl when I thought a bug was crawling up my arm and it was just a blade of grass. Maybe he will come back. I enjoyed having a man in the backyard who actually listens to what I say 🙂

If you like applesauce, have you tried the pear version? I really like it! Great little “under 100 calorie” snack. In fact I like it better than applesauce but I don’t like the price. It’s like a $1 and some change higher than applesauce. What gives with that?! It really is delicious. If you catch it on sale, grab a few to-go cups.

How many of you like Alfredo sauce but don’t love the calorie and fat content? I like it too but I have zero room for high cal dishes in my diet plan. So this weekend, I made the best Alfredo sauce-EVER. In a saucepan, melt 1 wedge of Laughing Cow reduced fat cream cheese, 1 wedge of Laughing Cow creamy swiss cheese, and 1 wedge of Laughing Cow garlic and herb cheese. Add 1/2-1 cup skim milk, garlic salt and black pepper to taste. Pour over hot noodles. Oh my word! So yummy and under 200 calories (that’s for the sauce. Don’t forget to count the noodles. I used a high fiber noodle)! I promise you will not miss the heaviness of regular alfredo sauce.

    Sounds awesome…I like the Laughing Cow cheeses and a cracker from Sams … I will have to
    look up the name for you…

    Elizabeth, what foods do you eat at breakfast? That’s my hardest meal to figure out.

    • Mary-breakfast is usually eggs, sausage, skim milk, fruit and low fat or fat free cream cheese spread on toast. Other times I eat a bowl of cereal or oatmeal with fruit. If I’m in a really big hurry I grab a low fat chocolate milk and a 90 calorie garnola bar. 🙂
