Day 21-“Where I Come From”

Country music singer Alan Jackson had a hit song once called “Where I Come From.” If you listen to the words of that song closely, it does a great job describing southerners. In fact, one lines says, “Where I come from its cornbread and chicken.” Amen, Alan Jackson. You nailed it!

I grew up eating my grandmother’s famous fried chicken. I am telling you no southern cook I know can come close to frying a bird like she can. The crust is perfectly crunchy and the meat is moist and tender. She has a pot that she uses only for frying chicken-nothing else (I swear that pot has to be lead lined. It’s older than I am). I’ve asked her to please “will me” that pot. It not only has sentimental value but it reminds me that a delicious artery clogging meal can be made with a lot of oil and a smattering of love 😉

If you crave fried chicken but worry about the health risks associated with the fat and calories I have a tasty solution. It is a recipe my mom got from Weight Watchers years ago. She still makes this delicious chicken and it is fantastic.

Southern Style Oven-Fried Chicken

1/2 t. all-purpose flour
1/4 t. table salt/pepper
1/8 t. cayenne pepper
3 oz. buttermilk
3/4 C. corn flakes crumbs
1 pound boneless, skinless chicken breasts, four 4 oz pieces

Preheat oven to 365 F. Lightly coat an 8 X 8 X 2-inch baking dish with nonstick cooking spray; set aside.

Combine flour, salt and cayenne pepper together in a medium-size bowl. Place buttermilk and corn flakes crumbs in 2 separate shallow bowls.

Roll chicken breast halves in flour mixture and evenly coat each side. Next dip chicken into buttermilk and then corn flakes crumbs.

Place coated chicken breasts in prepared baking dish. Bake until chicken is tender and no longer pink, about 20 minutes (there is no need to flip the chicken during baking).

Weight Watchers: 1 breast per serving – 4 POINTS per serving

    Well, Elizabeth, I am sick so I won’t be doing anymore than I have to…I have lost my equilibrium,
    balance, etc…my teeth even hurt…the chicken your grammy made sounds wonderful…the best I
    ever had was at an Amish restaurant, on a bus trip I took in Illinois……
    I will copy your Mom’s recipe but I am off to lie down and try to once again get rid of this hideous
    headache..

    I’ve lost 11 lbs. using the Livestrong app on my iPhone. Keeps me honest entering everything I eat. I had a piece of broiled mahi mahi and a salad with homemade grapefruit/lemon curd/garlic dressing for lunch. It was great, but your chicken sounds wonderful. Had my big meal for the day, but will try your recipe tomorrow. Congrats on your weight loss. Keep up the good work!

        It’s from one of the Publix recipes. You can make the chicken along with it, but I use it just for salad dressing lots of times. Or sometimes I’ll add fish. A couple of tablespoons is plenty for just salad, so probably 1/16th or less of a recipe.

        Citrus Chicken Salad

        Ingredients
        2–3 grapefruit
        1/2 cup lemon curd
        1 teaspoon black sesame seeds (optional) (I use regular white seeds, toasted)
        1/2 teaspoon minced garlic
        3 boneless, skinless chicken breasts (1 3/4 lb)
        1/4 teaspoon kosher salt
        1/8 teaspoon pepper
        1 tablespoon canola oil
        2 tablespoons water
        1 bag (4–5-oz) spring mix salad blend

        Prep
        •Cut grapefruit in half; remove grapefruit sections.
        •Squeeze the grapefruit membranes for juice (about 1 1/3 cups).
        Steps
        1.Whisk lemon curd into grapefruit juice until smooth; whisk in sesame seeds and garlic.
        2.Preheat large sauté pan on medium-high 2–3 minutes. Season chicken with salt and pepper. Place oil in pan then add chicken (wash hands); cook 3–4 minutes on each side or until browned.
        3.Reduce heat on chicken to medium. Add 2 tablespoons water; cover and cook 4–5 minutes or until 165°F.
        4.Arrange spring mix on serving platter. Slice chicken; arrange grapefruit and chicken over spring mix. Drizzle with dressing and serve.

        CALORIES (per 1/4 recipe) 430kcal; FAT 11g; CHOL 140mg; SODIUM 200mg; CARB 37g; FIBER 2g; PROTEIN 41g; VIT A 50%; VIT C 110%; CALC 6%; IRON 10%

      Thanks for the kind word about my grandma. She was younger in that picture. She is 92 now and doesn’t cook as much.
